What Makes a Coffee 'Speciality'?

From the farm to your cup — the small decisions that separate good coffee from great.

Speciality coffee is less a label than a chain of care. It begins with cherries picked at peak ripeness, processed cleanly, and graded above 80 points by trained tasters.

At Estaaj we buy in small lots so we can trace each one to its farm. We roast lighter than the regional norm to protect the origin character — the blackcurrant of an Ethiopian washed, the cocoa of a Colombian.

The last link is you. Fresh water, the right grind, and a little attention turn good beans into a memorable cup. Our baristas are always happy to talk you through it.
